SPICY OLIVE PIZZA [Calorie Count: 210]
(2 - spicy mini olive pizzas)

Ingredients:


1/2 CUP -- ONION, FINELY CHOPPED
1/2 CUP -- GREEN PEPPER
1 CLOVE -- GARLIC MINCED
8 OZ -- TOMATO SAUCE
3 TBSP -- BLACK OLIVES PITTED SLICED
1 TSP -- BASIL DRIED
1/2 TSP -- OREGANO DRIED
1/8 TSP -- RED-PEPPER FLAKES, CRUSHED
6 MEDIUM -- ENGLISH MUFFINS, SPLIT
3/4 CUP -- PART-SKIM MOZZARELLA CHEESE
3 TBSP -- PARMESAN CHEESE GRATED


Preparation :
In a medium microwave-safe bowl, stir together the onions, green peppers and garlic. Cover with a piece of wax paper. Microwave on high power for 1 to 2 minutes, or until the oniions are tender. Stir in the tomato sauce, olives, basil, oregano andpepper flakes. Piece of wax paper. Microwave on high power for 1 to 2 minutes, or until the oniions are tender. Broil 2 inchesfrom the heat for 1 to 1 1/2 minutes, or until lightly toasted. Spread a generous tablespoon of the sauce on each muffin half, leaving a small rim around each edge. Then sprinkle each half with 1 tbsp. Of the mozzarella and 3/4 tsp. Of the parmesan.Broil 2 inches from the heat for 1 1/2 to 2 minutes, or until the mozzarella is melted and the mufin edges begin to brown. Serve immediately makes 6 servings.
