ORANGE AND CABBAGE SALAD [Calorie Count: 52]
(preparation time: 10 minutes, cooking times: 5 minutes, serves 10.)

Ingredients:


9 TEASPOONS CHOPPED CHINA GRASS JUICE OF 8 ORANGES
1/4 TEASPOON LEMON JUICE
2 TEASPOONS SUGAR
1 TEACUP SHREDDED CABBAGE
1/2 TEACUP GRATED CARROT
2 TABLESPOONS CHOPPED CELERY
2 TABLESPOONS CHOPPED CAPSICUM
SEGMENTS OF 1 ORANGE
SALT TO TASTE
GRATED CABBAGE AND CARROT FOR DECORATION
FOR SERVING
THOUSAND ISLAND CURDS DRESSING


Preparation :
Put the vegetables in cold water for 10 minutes. Drain. Add 1 teacup of water to the china grass and cook on a slow flame until it dissolves completely. Strain. Add the orange juice and vboil for 1 minute. Cool until jukewarm and then add the lemonjuice, sugar, vegetables, orange segments and salt. Place in an attractive mould and put to set in the refrigerator. Just before serving, dip the mould in hot water for a few seconds, loosen the sides and unmould on a plate. Decorate with grated cabbageand carrots.
