MEXICAN RICE [Calorie Count: 121]
(1 small bowl - mexican rice)

Ingredients:


1 CUP -- BROWN RICE
1/2 CUP -- ONION, CHOPPED
1 CLOVE -- GARLIC MINCED
2 CUPS -- CHICKEN BROTH CANNED REDUCED-SODIUM DEFATTED
4 OZ -- TOMATO SAUCE
4 OZ -- GREEN CLILI PEPPERS, DRAINED, DICED
1/4 TSP -- CUMIN GROUND
1/8 TSP -- BLACK PEPPER


Preparation :
Lightly spray an unheated large skillet with nonstick spray. Heat teh skillet over medium-high heat. Add the rice, onions and garlic. Cook until the rice is browned, stirring occasionally. Stir in the broth, tomato sauce, chili peppers, cumin and pepper.Bring to a boil, then reduce the heat. Cover and simmer about 45 minutes or until the liquid is absorbed. Makes 6 servings
